Park on such parking lot, turn off the engine ( [E] by default) and go asleep ( [Enter] by default). When you are resting you see only passing hours. Remember that you can rest when you are looking for orders but also during shipping cargo. Pay attention to delivery time as you may, quite literally, sleep through the deadline.
For full immersion, you should try checking the time when you start out fresh from you sleep, add 11 hours to it to predict your compulsory stop time, then every now and then check the time and map to ensure can stop at a service station before the compulsory stop time is reached. Don't start a long haul when you've got less than 9 hours until your next sleep break. If the job doesn't take more than 11 or 12 hours to deliver, the game won't give you any extra time for sleep breaks. If you push it too far after you start getting fines for avoiding sleep, you will eventually fall asleep at the wheel.
You get a message when you can rest. Park, stop the engine, and press the control the game tells you to use to rest. You visit the Sandman for a while and then come back to life to drive again.
